Saturday and Sunday Dinner~~Baked Potato Soup

Peel and dice 5 or 6 potatoes. Boil until soft. While the potatoes are cooking, chop an onion and put in crockpot. Drain potatoes, mash and put in crockpot. Add 2 cans evaporated milk (not condensed), 3 cups milk, salt, pepper, 1 tsp crushed garlic, and enough water to cover potatoes. Cook on low for 6-8 hours, stirring occasionally. Add a pouch of potato topping (found in produce section at grocery store) and cook on low for another 10-20 minutes.

You can substitute potato flakes for fresh potatoes. I can’t imagine it would taste any different. But it would eliminate all the peeling, cutting, boiling and mashing. I might try it next time.

Creamy Chicken Soup

Ingredients
3 cans condensed cream soups
5 cans water
2 cans Veg-All or Vegetable Medley
garlic powder
pepper
2 lbs chicken (shredded or cubed)
2 pkg Frozen Egg noodles or 1 1/2 c dry egg noodles

In a large crockpot, add everything except noodles. Cook on high for 4 hours or low for 8. Add noodles and cook for another 20-30 minutes or until tender.

Pizza Soup

Sounds gross. Stevie insisted on having this for dinner so we will see how good it is.

Ingredients:
2 14oz can Italian Style Tomatoes
2 cups beef broth
1 onion, thinly sliced
1 bell pepper, seeded and chopped
1 pkg pepperoni
1 cup shredded mozzarella cheese

Combine everything except the cheese in the crockpot. Cover and cook on low for 7-8 hours. Serve in bowls and top with cheese.

Edited to say--It was actually pretty good! Thin and not filling, but tasted good. I served it with garlic/Parmesan bread. But even with the bread, it seemed like it needed something else to make it great. Like noodles of some kind. I might try it again and add some kind of fun shaped noodles.
